Varley, the executive chef at Michael Mina’s popular Bourbon Steak restaurant in Washington, DC, will serve dishes like chopped fatty tuna with anchovy broth and caviar; smoked venison with celery and matsutake; and passion-fruit panna cotta with avocado, tangerine and coconut sherbet. These dishes and more are available at lunch (¥3,900), brunch (¥4,900) and dinner (¥8,800/¥10,800); a sumptuous tasting menu with wine pairing is ¥18,000. Through October 27.
